Our April potluck was a Peruvian ethnic night and our annual chapter birthday celebration. As sometimes happens, this time our guest speaker had to cancel at the last minute, but nevertheless, we still enjoyed the evening dining together and sharing what we knew about the culture. In keeping with the theme of the evening, some brought Peruvian-inspired dishes, such as my arequipe (pictured above) that consists of yellow potatoes, tomatoes, red chili peppers, parsley, apple cider vinegar, and olive oil.
Despite the last minute change, the people attending had the best show-must-go on attitude. As the meeting fell in April, it was the birthday month for the chapter. Now 8 years old, we’ve held potlucks every month since the first in April 2010. To help celebrate, Joy Farrar brought some Kenter Canyon Farms organic sourdough, cold cuts and cheese from Applegate, Firefly Kitchen sauerkraut, Primal Kitchen mayo, Fork in the Road hot dogs, and Jackson’s Honest potato chips.
